When to harvest coneflowers

I cut my back when they get so tall they begin to fall over. The flowers are usually still purple. If I hang the stems (with the seedheads) up to dry, will the seeds mature enough to harvest later this fall?

I think you'll have to leave the flower heads on the plant until they turn brown. Ripe seed should be a glossy brown or black color and should shake loose from the seed heads with relative ease.

Are the seeds spikey?

No, the seeds are white. The spikes are part of the chaff!

And the spikes are painful when they get stuck in your finger.

The seeds are ripe now, because the goldfinches are all over them.
