I'd second the Dell book also - it was required reading for several college hort classes. A little simplistic perhaps but it certainly covers the basics. I'd also look into any seminars offered in your area on running a small business - the SBA typically offers these but they may also be sponsored by other community organizations. And there is lots of how-to business plan info on the 'Net. I will say that when I wrote my business plan (after reading the Dell book and doing whatever other research I could think of) I did work with a business consultant (family member, no fee) to make sure all the t's were crossed and the i's dotted.

I'm not so sure Tony's book would be hugely relevant - there is a LOT of difference between operating a nursery and running a landscape biz.
