Drooping stems

I have an extensive garden and most plants do well. However, I have one problem that I have no idea what causes it. Although the plants seem healthy and have great foliage, when the blossoms break out, the stems don't hold the blossoms up and droop over. I have this problem with the dahlias, carnations,and calla lillys. I live in northern Arkansas near the Missouri border. This area is all rock and almost all my plants are in built up flower containers. Perhaps the beds aren't deep enough?. Most are 10 inches deep. I use railroad ties, rocks, and landscape timber.
