Forcing bulbs

I'm not sure if this is the right board or not but I was hoping someone can help me.

A friend gave me a hyacinth bulb that she started forcing in a glass container made for that. The roots were in the water in the bottom but the rest of the bulb was above and dry. It looked great but it started blooming way too early and it looked deformed. The leaves were only 2" high and the bloom came out of the side.

I threw it away and started a daffodil b/c that was all I had on hand. It was growing perfectly and now I notice a bud. The leaves and bud are only about 2" tall.

What's going on? Why are they blooming prematurely?
