Yes, I have a couple which I only grafted last month that are leafing, so not a lot of experience, but enough to be encouraged. I have a problem with sun on my peach tree, now 12 yrs old. It seems to get sunburned here in southern CA. this didn't become a problem until it was several years old, strangely enough. I think partial shade is a good idea.

The easy answer is yes, those species can generally be grafted one upon another, well not the pear. (though you can graft Apricot and nectarine to peach or cherry as well)
