Grafting onto Crab Apple Tree

I have 10 healthy crab apple trees between 3 and 4 feet tall, and also have 2 varieties of minarette apple trees and 1 minarette pear tree. My pear and apple trees are still rather young, (this is their first or second year and still have not produced fruit or flowered) but i was considering grafting some of my varieties onto these health crab apple trees.

I planned on using a wedge graft to completely switch varieties from crab apple to eating apples or pear. The crab apple seems to have a good root stock for growing in my climate, and my minarettes are flourishing in the summer and have proved hardy over winter in frost and snow!

Im knew to the subject of grafting and growing fruit trees, and would greatly appreciate advice on the matter, especially if crab apples would be a great root stock for edible apples and pears!
