If any on is doing this they are not publishing the results of there experiments..... Therefor only trial & error will give the results you need.
I would take clues from the work on producing semi drarf fruit threes & dwarf fruit trees, The principes should apply.

I don't see any reason why you could not recut the root stock and graft again. The same rules apply as when originally grafted. The root stock must be growing well and have the stored energy needed to make the connection to scion that is also alive and ready to grow and come out of the dormant state. Al
