Replacing Arbor, retaining vines

Our garden has a fence with an arbor at the gate with grape vines and clematis growing all over it. This winter, both the arbor and the fence collapsed, which is fine because we will be re-fencing the garden area this spring. This will give me an opportunity to replace the arbor as well, which is also a posotive.

My question is: What is the best way to remove the vines from the original fence and arbor and what is the best way to re-entwine them around the new fence and arbor? I would like to salvage as much of the existing vines as possible.

Any suggestions??
