Civil War era garden-Help!

I'm enrolled in the Kentucky Master Gardener program and need to complete my volunteer hours. I was thinking of starting a community-civil war garden in our town. Our preservation society focuses solely on the civil war time period. Sadly, I don't know where to begin on developing a plant list. I'm sure I can track down herbs, but I don't know what ornamentals and/or perennials would be good. Any help is greatly appreciated!

Are you aware of the "heirloom" forum on GW? They specialize in heirloom plants and, if I remember correctly, there are lots of KY folk there! I'm certain people here will come up with good suggestions, but that would be another resource. Have included a link below.
