Early 19th century garden fencing

I'm so glad to have found this forum!

I'm working on the design and implementation of an 1830's-40's North Carolina Family Kitchen Garden for our local history museum. The "family" would be considered middle-upper middle class for the time period.

We need to put a period fence up around the garden, however, I can't decide what would be a good height for it. We need to keep deer from hopping the fence and gobbling everything (impossibility, I know) but, at the same time, we want the garden to be visually pleasing and "inviting" to our visitors.

3' seems too low. Does 4'seem about the right height or should we go as high as 5?
