Need a 5-8 foot screen

I've got a non-HOA approved raised bed vegetable garden in my back yard. I am looking for something to grow at the end of it to at least semi-disguise what I've got back here (it's 8' wide (the length I'm trying to plant), 12' long). I have an edible landscape installed with trees and bushes, but it will take several years for them to be at a height above the fence line. The garden is only semi-visible from the second story windows of three neighbors and fully by two backyards. The problem is I'm in Colorado Springs, we have high, dry winter winds so I am assuming bamboo is out (the Denver Zoo does have bamboo but they don't have our wind). I don't want to add another 10' in length to the garden with bushes so I am thinking some upright grasses might work. I would like some advice...I've been deliberating over choices for a week and am running in circles at this point. Thanks.
