The problem you have with grafting onto large trees is that the plant will prefer to feed the established stuff, not your newly introduced graft. Those 3-in-one trees are done as seedlings.

But its worth a try, anyway. Grafting isn't rocket science, there are plenty of sources of how to to this out there on the web. You'd really have to goof up to do any damage.
