Questions about my first potato garden

I planted 7 different kinds of potatoes this year. I was under the impression that the early potatoes would die off after they bloomed and that I should wait two weeks before harvesting. Well, they started to turn yellow and fall over, but now they are sending out new shoots from the bottoms of the vines. Specifically this is happening with Purple Majesty. Also, I wasn't sure if I should water them when they started to turn yellow. I didn't, but now we got a good rain and they are growing even more.

What do I do now?

The possibility of this happening is one of the reasons that I begin harvesting potatoes at the 1st sign that they are dying back.

What to do now? I'm not completely sure. But, I'd just dig them immediately, break off the sprouts, and let the tubers "cure" somewhere dry and out of the sunshine for a day.

If that isn't a good idea, someone should say so . . .

Yes, dig them and you can eat the teeny tubers under the small sprouts. Best not to water them near harvest, as dry soil is easier to work than wet soil.
