tomato question

I saw something on the tomato forum about pruning and pinching the flowers on tomato plants. I get the pinching the flowers part (and now know what I'll be doing this weekend), but not sure what exactly needs to be pruned. My tomato plants did come back from all the hail storm damage (well all but the two that were in pots) and are now all about 4 ft tall with lots of green tomatoes and plenty of flowers.

I'm also really worried about the weather turning on me and losing the tomatoes I have. Will pinching the flowers help ripen the green ones? At what point do you pull the green ones and try to ripen them off vine? Do I wait until there is a freeze risk before I go to that extreme?

Thanks for any help. If I remember I'll post some pictures of my recovered plants. Because even without any tomatoes I'm so happy that they came back at all!
