Many types of roses do this. It has to do with the weather being cooler. I have a Double Delight HT, it starts out white/pink and changes to red/cream when it gets cooler outside. Also over time the blooms fade to another color. Some roses, like Tuscan Sun, have different color blooms opening at the same time. It's a beautiful characteristic to me. I think you might have Loving Touch or Jean Kenneally, but Jean is more apricot to me. You can see a pic at Nor'East roses or John's Miniature Roses. Is it fragrant, and how big is the bush?

I really don't mind the different color blooms. I especially like the cream colored blooms. The temperatures here have changed recently. My roses have no fragrance at all that I can detect. The bush is rather small right now because of the hard time it had this past winter and the short growing season we have here. It's only now really beginning to come into it's own. The bush stands approximately 12 to 18 inches tall right now though. I looked at the pictures on the two sites you recommended and it certainly does look like the picture of Jean Kenneally on John's Miniature Roses. More than it looks like the Loving Touch. However on the Nor'East site I find it resembles the Loving Touch more. It's so confusing. The next miniatures I get will be from a supplier and I'll know what kind they are. You're welcome, wish I could have helped more. I cant stand when they dont tell you what you're buying. It makes it very hard to know how to grow a certain rose. I love minis and plan on adding a few more. Have fun, and if you have any more questions about roses let me know. :)
