Overwintering Idea...Do you think it will work?

Greetings,

I am in the process of building a greenhouse. Unfortunately, it is not completed and I'm afraid I will not have it heated this winter.

I'm worried about the temperature fluctuations due to being unheated and was not going to put any plants into it this winter. However, I have over a dozen potted mini roses I've purchased from Nor East Roses.

I do have a pond dug out which I will not put water into until after I get further along with the greenhouse. It is about 4' deep. Could I take all the pots of roses and place them in that 4' deep area and then place bags of mulch (leaves) over them? Will the temperature fluctuations cause my roses to perish. I'm worried the day time temps with the sun beating in on the windows may increase the temps quite a bit in that gh and then in the evening with no heat it will cool down drastically. Perhaps I should just place them in my unheated garage and hope for the best?

The roses were rated for zone 5 & 6.
