Yellow roses turn white

Hi there,
I am in San Diego, 5 miles in-land...planted several roses in April in an area that gets 5 full hours of morning sun. Wanted a bushy look to cover some large white concrete wall. One of the roses is "Julia Child", own root, which I know to be a deep yellow. However, the rose opens in a very pale yellow and then fades to white with a pinkish kinda dots.
In a different flower bed another yellow rose that supposedly has "bright yellow flowers" - "Sunny Delight" also turned white. What's wrong? I amended the soil before planting and regularly fed with Miracle Grow.
Please help!

Right now it is probably the heat. Mine does the same but is more buttery yellow in the cooler months.

I agree with Kippy, the heat. In high heat a lot of roses will only be pale imitations of their regular colors.
