Yellow roses turn white

Hi there,
I am in San Diego, 5 miles in-land...planted several roses in April in an area that gets 5 full hours of morning sun. Wanted a bushy look to cover some large white concrete wall. One of the roses is "Julia Child", own root, which I know to be a deep yellow. However, the rose opens in a very pale yellow and then fades to white with a pinkish kinda dots.
In a different flower bed another yellow rose that supposedly has "bright yellow flowers" - "Sunny Delight" also turned white. What's wrong? I amended the soil before planting and regularly fed with Miracle Grow.
Please help!
