Once blooming seedling questions

I got some hips today from what seems to be an old moss rose and I am wondering how to keep them over winter to germinate in the spring. I know they will not bloom the first year, and since I have enough trouble keeping seedlings alive, I am thinking it best to germinate them in the spring, perhaps putting them in the fridge around February, but how do I store them until then?

Assuming it is just plain old Common Moss, will it come true from seed?

Has anyone had any luck with moss from seed?
