recommendation on compact, non-woody salvia

I planted mexican sage in my last garden and it went nuts! It got 1/2-1" branches and WAY to woody. Even when I cut it back it drooped and got woody. Are there any alternatives that present the same color yet smaller and less woody. We have a "tuscan" theme going.

You don't say where you are in CA, which makes a big difference in which sages work best. Also, feel free to cut that S. leucantha all the way back to the ground in winter to prevent woodiness. Some other possibilities...
In sun:

Salvia officinalis

Salvia nemorosa

Salvia melissodora

In shade:

Salvia farinacea
