Buds today, show Memorial Day

Are there any tricks to keep a Sans inflorescence from developing too quickly? I want to show it at the C&SS show on May 23 & 24. I would like for it to still be in bloom for the show, however it looks like that won't happen with as quiclky as the flower stalk is growing. Already in one week since noticing it, it has doubled in size.

You try to keep it in a cool room, a lot of plants will slow down or stop growing if its cool.
