Last year I canned some dilled okra. The taste was wonderful--best I ever ate. But, after awhile, the okra got slimy and then really slimy--even in unopened jars. What did I do wrong???

My experience has been that slimey pickles are the result of under processing. There wasn't enough heat for long enough to kill all the micro-oragisims. Don't eat slimely pickles.
