Depending on how stored (cool and dry) most seeds with the exception of some alliums are viable for many years. Your 2 and 3 year old seeds should be fine unless they have been exposed to high heat/humidity at some time.

You can do a test germination on them by placing a few of the seeds in a damp paper towel, place it in a ziplock bag and place it someplace warm. Check daily and note the % of those that sprout. Gives you a good guideline as to how many of the rest will germinate when planted.

Dave, thank you very much for this information. I guess that is the viability test that the seed companies themselves use? I store my seed in plastic baggies after drying them out thoroughly, then in a rubbermaid container with a tight lid, inside a cabinet with a sliding door , so some light but fairly dim. It is in a room that has the most consistent temperature in the house. The air conditioning is going in the summer and the heat in the winter. I wish I had an extra fridge/freezer in the basement that I could store my seeds in. But..OTOH...I suppose it is just as well, to buy what I need and use it! lol I can be a saver and have to watch that tendency.
