Various newbie seed collecting questions

I'm new to seed saving & only thought to collect the obvious seed heads from my garden last year (hibiscus, rose of sharon & wisteria)...mainly because they were hanging in front of me so I thought "hey, I should pick those!"

Now we've have a good thick blanket of snow on the ground for many months now & after a walk outside today I'm realizing there were many more opportunities to collect seeds that I had missed. Some still have heads on them from the old flowers, I can't use those right? They've been wet, then dry, then wet again for months.

Can seeds be collected from things like azalea, holly, pussy willow & hydrangea? I see spent heads where the flowers were but how do I know if there are seeds in there?
