How did gardeners used to save their seed?

Hi folks,

I'm interested in old gardening techniques and am wondering how gardeners used to save their seeds. Not so much in terms of the hands-on techniques but the keeping species from crossing techniques. For example, beets and chard will cross, so did they only grow one of them and if they wanted the other, trade with someone else? Or perhaps they only kept the seed from one and purchased the seed from the other? Or did they stagger the flowers so that they didn't pollinate at the same time or even same year? Maybe they just did without the diversity we've grown accustomed to? Did people only grow one type of carrot and enjoy it for all it was? Any book recommendations would also be appreciated.
