When can seeds be used - general question

My chive plants bloomed, the blooms died, and seeds formed/matured. I cut the dead blooms off and have saved the seeds. How much time does a chive seed have to "rest" between formation and planting?

This, of course, is a basic question about seed harvesting and I suspect the answer varies based on the plant type.

Think of how the plant would have behaved if you hadn't collected the seed. The seed would have ripened and fallen to the ground immediately. Seeds do not need a 'resting' period before sowing. Some need specific temperatures or moisture conditions to germinate but none actually need storage. Most seed germinates better the fresher it is.
