Can we revisit this question? Mine seem to have sealed themselves with the dead flower and seem a bit mushy?

It's generally best to let the pods mature on the plant which means leaving them on until the pod is dry and brown.

Sanity, I'm having the same trouble with Hollyhock this year because of all the rain. I have taken to pulling the mushy dead blooms (yuck!) off the pods I want to get seeds from then letting the pods mature and dry outside for a while. The pods that I didn't get the mushy blooms off have started to mold.

There might be a better way, but here is how I harvest my Canterbury Bells seeds:

I wait until the plant is very dry (most people would consider that too unsightly) then while wearing gloves to protect my hands from the prickles, I use garden clippers to cut the pod off of its stem just a little past the stem itself, so that the chambers inside are all exposed and I can shake out the seeds into a container.
