Vegetable Seed Collecting, Cross-Pollination Questions

I know this is similar to a recent post, but have some of my own questions to ask.

I would like to save some veggie seeds from my garden this year. Because of the close proximity, I am using the bagging method with my tomatoes, with those bridal favor bags, as suggested on a garden Web "how to" article. DO I have to go in the bag and do something to the flowers or will it happen on its own?

Also, I would like to collect Eggplant seeds. I only have Little Fingers and White planted. Do they cross pollinate easily? I heard not, and to just let the eggplant get over ripe to collect seed.

Now, I would like to collect pepper seed. Do they cross pollinate? Again, I do not have the option of planting different varieties far away from each other, so all will be close. If so, is cross-pollination not as likely as with tomatoes or do I have to bag them too? Or is it not worth it?

ALso the same question with basil, carrot, beans/peas and radish.
