Seed Collection

I've read about waiting until seed matures and ripens. Others say to clean the seed, dry and store it. My questions are: How long must seed (not in pods) remain on a dead flower before it can be gathered? If the flower is dead, but isn't ready to drop its seed (i.e., shaking the flower in a bag won't detach the seed), can you extract the seed from the flower, dry and store or does the seed need to continue ripening and maturing in the flower even after the flower is dead?
