Hi,
In the dried head between at the sharp pieces, there are cone shaped seeds. Sometimes there will be both viable and non-viable seed. The viable ones are plump and not bendy. On the link below there are pics of the flowers, etc. at different stages. The "Fruit Head in Longitudinal Section" shows the seeds nestled in the sharp pieces and the link below that one shows good seed.

One of the best descriptions I've heard of Echinacea seeds (was it Trudi who coined it?) was "tiny monster teeth." When you're sifting through the debris of the cone head, and you see tiny monster teeth (not totally white, monsters don't brush their teeth very well), you've got seeds. :]

Be aware, though, the birds may get to the seeds before you do. I've already seen finches on our coneflowers and I don't think there's a petalless head on the plant yet, but the blooms are definitely fading. I think the birds are keeping an eye on things.... lol. The little buggers already beat me to the blackberries!

However, birds are pretty sloppy eaters... don't be surprised if you find coneflower seedlings around your place next year. I always do.
