Beth, just pick off the dried heads and place them in a bag and shake it up--this works with most seeds...

The link below shows you what the seed pod looks like. It's right where the flower was. The seeds just fall out of the dried pods.

From my experience, not all spent heads seem to produce seeds in dianthus. Pick a few fatter pods and open them up. You should see black round hard "flecks" which should be the seeds. Hope this helps.
