I am especially concerned about my zinnia seeds. Just wondering what happens if the frost hits before the seeds are ready?

You should have no problem with ripe seeds on zinnias before frost, but if you do, you can always cover the plants. If it is a one night drop which sometimes happens in the fall, you can cover the plants with a sheet for the night.
