Amaranthus question

I had no idea what an amaranthus was. It has been blooming for weeks now. It is lime green, the same color as the leaves. How does one collect seeds from this annual?

I collected some last night. I'm sure you can use most anything, but I have a big stainless steel bowl. I use one hand to hold the bowl and the other I keep rubbing back and forth on the plume. The ripe seeds should drop in the bowl, box, etc. You get bugs, too. lol.
