How do I save and prepare poppy seeds to use for cooking?

If you look at poppy seeds in the grocers you will have an idea of what mature seeds look like. As long as you have a variety that can be used for cooking, just dry them when they are the same color. An easy way to get a culinary variety is to sprout some of the ones sold in bulk at the grocers.
