Scallion seed production?

I am cross-posting this at the allium forum, and hope for some help .....i have some beautiful red scallions that i would like to grow out for seed, if possible. With our drought, i pulled up those that have larger or slightly round bottoms from being left in ground a long time - others all eaten by the family! Shall i plant these with the fall garlics and multiplier's and mulch heavily, or try to figure out how to hold them until early spring? Since they are thinner and smaller than other onions, i imagined they might freeze over winter? I have saved seed from both leeks and bottle onions,several times, with no trouble. These are such small "bulbs" that i don't know what to do!

I sure would like to keep seed rolling from these like the many others i grow. Would love to NOT rebuy seed each year for something we use regularly (and these are sentimental seed from an overseas journey)!
