A question about rose seeds

I am collecting Rugosa seeds for winter sowing in December. I have hips for white, red and pink roses, but the pink ones, after drying were not soft like the other hips. They were quite hard i.e. I had to use a knife to open them up. The seeds look fine, but are a little smaller than the white and red. Is it possible that I picked the hips too early? Are these any good or should I collect more mature hips. They were already red when I picked them.
