way to trick kale into bolting in cold weather?

I have a kale seed that was planted in the spring but that "volunteered" and germinated in the hottest part of July, and grew exceptionally well all summer, a robust plant through heat and draught and tasty to boot.

I would like to seed save from this to potentially use it as breeding stock for a kale that would do better in hot weather, but I cant figure out how to get this kale plant to produce seed heading into the fall. Short of building a green house around it, any suggestions for how to get this plant to go to seed so I can save the genetic material?
