The Disappearing Calendula

I want to save seeds from my Victoria Sunset calendula. It's making seeds. Every day I go to check them, but before they are brown, or as they turn brown, or something, they disappear - the whole head doesn't disappear at once, just a few seeds at a time. They're not on the ground, so perhaps they're getting eaten. If they've been on the plant awhile and are reasonably solid but still green, will they be viable if I pick them? I know green nasturtium seeds will turn brown; will calendula?
