Fermenting tomato seeds - only done when mold develops?

I'm saving tomato seeds for the first time, following the "How to Save Tomato Seeds" FAQ on this site, and I was wondering - are the seeds only done fermenting when mold develops on the surface?

I first placed the seeds in a cup with a small amount of water (2 teaspoons) Sunday night and am now on the fourth day, but I haven't seen any evidence of mold on the surface yet. I'm a little concerned about leaving the seeds in the water too long, though, since the FAQ indicated that the process only takes about 2-3 days, and I'm trying to decide if I should take the seeds out now or wait for mold.
