A question about Poppy Seeds

I have been growing and saving poppies for many years, but this year I got some new seeds - different varieties from those I've grown before. Some of them bloomed rather late and I staked the seed heads up so they could dry. I had to bring them in because our first snow storm was on the way and the stems seemed brown, but they were wet because of recent rain so I brought them in and let them dry. Now I have shaken the seeds out, they are a pinkish/light brown colour, not black like all the other seeds I have, and the size is normal. The flowers in question were opium with a rather deep pink colouration. Are these seeds this colour because they are immature? Are there any poppies which produce seeds of a colour other than black? Should I keep them or chuck them? Thank you.
