Seeds that need winter chill

I'm inexperienced when it comes to planting with seeds. I enjoy keeping a country cottage garden style garden with lots of flowers. Two years ago I purchased a "Kiss-Me-Over-The-Garden-Gate" - Polygonum orientale and collected seeds for the next year. Of the many seeds I planted the following spring only one plant sprouted. Upon doing some research I then learned that those seeds needed a winter chill, something that I don't often get here in SoCal. I have again collected seeds from the plant and they are presently in the refrigerator.

What other seeds from flowering annuals or perennials need a winter chill in order to germinate well? Thanks, Mike
