Question: Is it possible to prune an Eastern Hemlock and keep it around 3-5 foot tall and not too wide?

Yes, but it will not look natural.

If you're still considering the eastern hemlock, please remember that they are susceptible to the hemlock woolly adelgid and will have to be sprayed a few times a year (a horticultural oil will work) for control. These little insects from Asia are responsible for the decline of hemlock stands throughout the Northeast U.S.
