Planting sasanquas now?

I want to espalier some sasanqua or sasanqua mixes on a trellis fence (in part shade) as a screen and, of course, for the enjoyment of the plants. The fence is about 8 feet high, but the screening plant doesn't have to reach that high at every point along the fence. Can I plant now if I promise to water conscientiously?

I would also appreciate suggestions for good cultivars to espalier. I prefer later-blooming (late fall/winter) to early blooming and single or semi-double blooms. Shishi Gashira?

I also want some not-too-wide upright cultivars. I love Maiden's Blush--flower form and fragrance--but fear she may not be cold-hardy enough for those once-every-20 years 5-degree killing freezes in Zone 7b. Any experience with Marie Young? (I don't know what she looks like, just that she's narrow and upright.)
