New Gardener

I live in South Louisiana (zone 8b). I started my bed at the end of April with 1:3 top soil:compost. Since this is my first house, I just jumped right into it to see what would happen. The bed faces west so it gets plenty of afternoon sun. Some of my plants look great while others are just sickly. My main problem is my dwarf gardenia and dahlias.

Gardenia- A week after planting, the leaves began turning yellow. The next week they began to fall off. I have read about pH and Nitrogen but I am not sure of either in my bed. After a few weeks, I noticed some branches looked as if they were dying and now they all are dead (or seem to be) except for one branch. They are black, laying on the ground.

Dahlias- I have something munching on the leaves. I have used Sevin on them but the holes are still there. Now the flowers are brown by the time they bloom.

Any suggestions would be greatly appreciated!
