Planning a SFG - part three

I am currently planning my first garden (will be a sfg) for this spring and this is my tentative planting list. Any input is much appreciated. I also have 16 unused squares, wondering if anyone has any suggestions as to what I should plant in these. I have 96 squares total 16 of which will have a support for vertical plants. Will any one or two veggies be produced way in excess compared to the others ? Main goal for the garden is salads, tomatoes for making salsa, veggies for making baby food for our first born, and general consumption. My biggest unknown is not knowing how much of planted item is the expected output (ie will i have 10x more carrots than everything else ?
