I like your pictures! I built mine a couple of weeks ago. I went with the 1x1 method since none of my plants will get very big. For bigger plants, I would follow the spacing requirements, but mark it in squares. The Square method made it easy for me to plan where to put my plants. For my zucchini, I put my small onions and carrots in the squares near it since I know it's going to spread out some. But I didn't space them quite so close together as the SFG method says to...I heard you get smaller carrots this way. ;)

We're planning on planting tomatoes and zucchini in one row and building a trellis for them. I have a planting plan, and once I put the grid in and finalize it, I'll post it online for feedback.

I really like the look of your beds made with timbers. I built my newest one that way, but used rebar and corner brackets to keep everything in place. Welcome! I thought I heard someone mention "trellis!" or something........
