Hail damage

So over the weekend we had some pretty decent hail storms that wreaked havoc on my garden. I think the potatoes, which got ripped up, but not completely stripped will come back, but my bush beans (Provider), beets, carrots, and turnips got almost completely stripped. My husband thinks that the leaves will come back as long as the stalk was left (which most of them were), but I wanted to check and see what some experienced gardeners thought. Should I wait a week or two and see what happens or should I go ahead and replant what I can? I am immensely grateful that this is the only decision I have to make after the storms this weekend and am praying for those that were on the worse end of the storms.
