Staining Stairs and Bannisters

Recently had new stairs, treads, bannisters and balusters installed. All have been installed with only a coat or two of polyurethane. We wanted to stain them to match the hardwood floor, an oak stain. The installer (we believe) was in a hurry to get the job done and recommended a natural look with only a coat of polyurethane. We hate it and now want him to stain to match the floor. How big of a job will that be and how costly? On top of that, we think he messed up and mixed white oak in with the the red oak.
