Grapefruit Thick skins

Just what causes very thinck skins in grapefruit?
In years past they had normal skins.
In years past I've used citrus fertilizer from Walmart's, this year I just used 21-0-0 which was recommended by a Master Gardner. Could this be the cause?

You guessed correctly. The fertilizer you used was the cause. Citrus do best with a fertilizer ratio 3-1-1 NPK. Like 15-5-5 or 30-10-10.
