Red or Green? Chile pepper help!

Hello,

I have a question regarding chile peppers; you folks in New Mexico may be able to help me! When people refer to "red or green", "Christmas", etc., what particular varieties of chile peppers do these represent? I would like to grow my own (for eating and also for possibly making my own ristra) but I have no idea which plants to purchase! So, who's the red chile and who's the green chile?!

Believe it or not it's the same green chile. Red chile is made by drying the pods (which turn red in the process. Have you seen ristras?) and then grinding them.

Yup - they're the same pepper. I'm not positive what variety of pepper is used, I always assumed they were Anaheims. You can pick them green, or let them ripen to red on the plant - you don't have to dry them to get them red, just let 'em ripen some more on the plant.
