Also a web search on "rabbit proof plants" found several lists with plants popular in Tuscany, such as Rosemary and Lavender, that should resist rabbits.

I have rabbit problems in my garden. They haven't touched my osteospermum, Columbine, Euryops, agastaches, or chrysanthemums. The rabbits eat some types of sage flowers, but do not eat the plants. They haven't messed with the penstemons, shrub rose, Spanish broom, blue mist caryopteris or catmint (nepatha).

Some Daturas a very drought resistant like Datura discolor and D. metelodes. They will kill the rabbits if they eat them.

Try sephora secundiflora or mescal bean. The seeds are deadly and I imagine the foliage is not tasty. Look for the silver varieties as they usually come from SE NM, or W Texas where it gets cold in winter. It is slow growing but thrives from Central America up into New Mexico, USA. I live in a 7b climate and it does fine. Good luck.
